…..with ground pink peppercorns. I am so addicted to this salad that when I make it I make another plate so that I can have seconds! The idea came from a salad my friend makes with tomatoes and watermelon, which I am also crazy about.
It is simplicity itself to make and cool and refreshing. Slice a cube of watermelon. With the pointed end of a small knife, carve out a circle in the center and down into the cube enough to hold dressing. Do the same with a ripe kiwi. Then fill them with balsamic cream, which you can find in the supermarket in the vinegar section.
Balsamic cream is imported from Modena, Italy and it is made from concentrated grape must and balsamic vinegar. It is creamy and luscious against the texture of the fruit, hugging each bite. If you try it, let me know what you think!
