Kappacasein makes these toasted cheese sandwiches that deserve a more exalted name. First of all they make it on Poilane bread, my favorite bread from Paris. Then they hand grate Montgomery Cheddar cheese and mix it with a little bit of onion and garlic, then grill it. The result is a gooey inside with tremendous flavor backed up by crisp sourdough toasty goodness. If it hadn't been so filling I would have ordered another just for the flavor thrill.
I went back a day later for their Raclette. You see, I love Raclette. When snowflakes start drifting down from the sky I start dreaming of Raclette. I even have my own Raclette maker. So the little green food cart that made the best sandwich I ever ate scored again with an outstanding Raclette. The cheese was warm and scraped over little hot new potatoes and served with crunchy spicy little gherkins.
Kappacasein's cheese sandwich easily makes the point that when you use the very best ingredients in a simple way you can often produce the very best food.
