All of a sudden, I am deluged with a wealth of strawberries. I buy loads of them in a sudden frenzy of celebrating warm weather again. After I made jam, and strawberry souffle, I bought some more and decided to roast them and serve hot over vanilla ice cream for dessert tonite. How the simplest treatment of all turned out so delicious and memorable is a mystery to me. I mean, this is really really simple. Follow me…….
You heat the oven. You slice the strawberries in half and toss them in some sugar and vanilla. They come out of the oven steaming hot with a luscious strawberry sauce.
You pour it hot over vanilla ice cream. So amazingly good that I already had some and will be having more tonite! If you would like to play with the recipe below, you could 1) add more vanilla or 2) cool the sauce and drip it into a cold glass of champagne or 3) save for the next morning and fill an omelette or top a waffle and dollop whipped cream on top….

- 1 tablespoon
- 1 teaspoon
- 1/2 cup
dark brown sugar
- 1 pint
vanilla ice cream
- Pre-heat oven to 400 degrees.
- Wash and halve strawberries.
- Mix together the orange juice, vanilla extract, and dark brown sugar. Toss the strawberries in this mixture to coat well, pile into a baking dish, put in the oven, and bake for 20 minutes.
- Put a little in the bottom of 4 parfait glasses or bowls, scoop the ice cream on top, then ladle more of the hot roasted strawberries on top and serve.
