I found some earthy golden beets at the market this morning. There were only a few, enough I thought to make soup for two. So I scooped them up and headed home.

I washed them, quartered them, and cooked them until tender.


I threw them in the blender with some of the water I cooked them in. A tablespoon of yogurt. I had half a carton left in the fridge. A teaspoon of tumeric. Salt. A pinch of sugar. A splash of club soda. A tiny hit of hot sauce. Whiz. Sunshine in a glass.
