I absolutely love it when you can get ripe tomatoes that smell wonderful and taste sweet. If you can, then this sauce is delicious over almost anything….including pasta, toast rubbed with garlic, or over an omelet. It is uncooked.


Uncooked Tomato Sauce


5 pounds of fresh ripe tomatoes (or Campari or cherry tomatoe

6 leaves of fresh Basil

3 cloves of garlic, peeled

3 scallions

4 sprigs of parsley

sea salt, pepper, good olive oil


1. Peel and seed the tomatoes then place finely chop them and put into a bowl.

2. Chop the scallions, garlic, basil and parsley finely and add to the bowl.

3. Add salt and pepper to taste. Add 2 tablespoons of good olive oil and thoroughly mix all together.

I love this over angel hair pasta…..or on toast. It is a way to celebrate the perfect tomato. If you have access to heirloom tomatoes, then save one and thinly slice it. It’s lacy effect is perfect as a garnish on top of the sauce.
