Raspberries in Brandy over Ice Cream

    For the weekend, I had to think of a dessert that would satisfy both me and my honey who was driving hours to see me. I know he loves raspberries, so I visited my local u-pick farm and came home with a basket of fresh raspberries. On the way home I visited my local shops and came home with vanilla ice cream and a bottle of French brandy. You can see where I am going with this.

    I had a couple of days to marinate the berries in brandy, so I washed them and dried them………..

    …..and layered them into my always handy Ball Jars with a layer of sugar and a top-up of brandy. After a good shaking upside down, everything mixed and was ready to take a nap in a dark cool place until the weekend.

    I served it over vanilla ice cream, with a shot glass on the side of the raspberry liqueur it had produced from marinating. He loved it. I loved it. I'm making more.


You will need 1 Ball Jar.

Wash and pat dry a pint of fresh raspberries. 

Put 1 cup of sugar in the Ball Jar, add the raspberries, and top up with brandy.

Close the lid securely and place in a cool dark place for a few days or a couple of weeks. Turn upside down once in a while to dissolve the sugar.
