I can’t believe it’s here! The nationwide launch of my new cookbook, the one I dreamed of writing, and I am finally holding it in my hands.
Once upon a time, I fell in love with the style of cooking around Nice in the south of France where I lived for so many years, and ever since have been learning it and collecting local recipes for this cookbook—Cuisine Nicoise: Sun-kissed Cooking from the French Riviera. Because Nice is nestled close to the Italian border, near the Italian city of Genoa, cuisine Niçoise is a perfect blend of the best of French cooking and the best of Italian cooking. What could be better?!
The cookbook came out amazing! My publisher, Gibbs-Smith, is known for doing beautiful books on architecture and interior design. They took that same design esthetic, put it together with my writing and my photographer’s luscious photographs, and created a work of art. It is big and heavy and beautiful and I’m so proud of it! I have one on my coffee table, one in the kitchen, and a stack all ready for Christmas gifts!
My photographer was Steven Rothfeld, master food and travel photographer. He traveled with me for 2 weeks to the south of France, to Nice, to my village, and to the open air markets where I shop, to capture photos of the ambiance, the food we ate and the food I prepared for the cookbook.
….which turned into page-turning beautiful illustrations of my recipes!….This one is for traditional Salade Niçoise, which of course was invented in Nice!!
……..and this one for Madame’s Peaches and Cream Tart….my favorite recipe in the book………..

Today, I am going to share with you one of my recipes from the book. Deceptively simple, it is a dish I often get served when I am with friends along the Riviera on hot summer days when you want something light for dinner and quick to put together.
Nicoise Rice Salad
- 4 cups cooked rice
- 1 large tomato, finely chopped
- 1 large green bell pepper, finely chopped
- 2 scallions, thinly sliced
- 1/2 cup flat leaf parsley, finely chopped
- 1/2 cup basil leaves, finely chopped
- 2 (5-ounce) cans light tuna in olive oil
- 4 tablespoons capers
- 1 (15 1/4 ounce) can sweet corn nibs, drained
- In a large serving bowl, add the rice, tomatoes, peppers, scallions, parsley, basil, tuna with the oil from the can, capers and corn. Combine with a fork.
- Make the following vinaigrette, pour over the top, mix well with a fork, and serve immediately.
- 4 tablespoons extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 3 teaspoons Dijon mustard
- 2 cloves garlic, minced
- 1/2 teaspoon fine sea salt
- freshly ground black pepper
- Whisk all ingredients until well blended and mix into salad with a fork.
So…..my cookbook is launched, starting a life of its own! I hope you enjoy it.
